Director of Banquets


Job Purpose:


Directly responsible for the overall operations of the Casino Resort and Singing Hills Banquet Departments.


Job Duties and Responsibilities:

  • Oversees Banquet and Special Events activities and staff by conducting venue and departmental meetings, conducting random venue audits, providing pertinent information to staff, coordinating menus with the Banquet Chef, assessing the needs of the business and making necessary adjustments, delegating assignments to banquet management, ensuring established policies and procedures are followed, providing guidance and instruction as needed.

  • Maximizes banquet and catering profitability by reviewing and analyzing current and historical financial data, reviewing budget projections submitted, developing bridal and banquet packages, reviewing client contracts and agreements, identifying areas in which reductions in expenditures and increases in revenues can be made, and revising and reallocating operating budget accordingly.

  • Ensures product and labor costs are within established guidelines by setting annual productivity goals, monitoring profit and loss statements, reviewing staffing overtime needs, creating a departmental staffing plan, modifying staffing as needed, creating and modifying productivity reports, and monitoring supplies for efficient and cost-effective utilization.

  • Maximizes the integrity of food & beverage processes by monitoring staff, reviewing daily point of sale reports, auditing monthly manager reports, ensuring correct general ledger codes are utilized, and submitting approved invoices to accounting to be processed.

  • Develops team members by training on service standards, and service etiquette, ensuring team members adhere alcohol service policies, monitoring team member performance, conducting performance appraisals, providing counseling, guidance, and corrective action as needed, and generating appropriate data-base transactions and paperwork.



  • Fosters excellent guest service by soliciting and listening to guest opinions and feedback, proactively identifying existing or potential service opportunities, implementing service improvements, addressing and resolving guest complaints, and compiling guest feedback data and summary of findings for management review.

  • Hires qualified managers and service personnel by communicating staffing needs and advertising requirements to Human Resources and interviewing and selecting the most qualified applicants.


Job Specifications:


Education and Experience:


Essential:



  • 5 years group resort hospitality experience

  • 3 years high volume catering experience

  • 2 years managerial experience

  • ServSafe Manager Certification

  • CA ABC Responsible Beverage Service Certification


Desirable:



  • Bachelor's Degree in business or related field or equivalent experience


Skills and Knowledge:
